Double Chocolate chip cookies with vanilla ice cream macerated berries and mint

Instructions:

1. Preheat oven to 350 degrees. Cream together butter, granulated sugar, and brown sugar with a mixer. Add egg, vanilla, and salt, and beat until well combined. In a separate bowl, sift together flour, baking soda, and baking powder. Slowly mix in flour to the butter mixture. Continue until the flour mixture is fully incorporated. Fold in the chocolate chips, and divide evenly into 2 6.5″ cast iron skillets. Bake at 350 degrees for 20-30 minutes until golden brown or until desired consistency. While the cookies are baking, macerate the berries by combining fresh berries with sugar. Toss lightly and let sit in the fridge until the cookie is baked. Remove cookies from the oven, and scoop ice cream on top while the cookie is hot. Garnish with berries and fresh mint. Dig in!
