Camembert, Strawberry & Caramelized Onion Sandwich

35–40 minutes
Instructions:
- Thinly slice the onions. Add them to a skillet with 1 tablespoon of ghee and a pinch of salt.
- Cook over medium-low heat, stirring occasionally to prevent burning. Be patient — this will take about 20 minutes, but it’s worth it.
- Once the onions have reduced by half and turned golden, add the balsamic vinegar. Let it cook down over low heat for another 10 minutes.
- Assemble the sandwich with sourdough bread, Camembert, strawberries, and caramelized onions. You can swap the strawberries for pear or green apple — both add a wonderful touch.
- Preheat and grease your cast iron sandwich press. Toast the sandwich on both sides over low heat until golden brown and the cheese has melted.
