Bacon-Wrapped Stuffed Chicken Roll

Using a sharp knife, carefully butterfly the chicken breasts so they open up and become thinner. Arrange them on a cutting board, slightly overlapping, to form one large rectangle.
- Cover the chicken with plastic wrap and gently pound it with a rolling pin or meat mallet until it reaches an even thickness.
- Remove the plastic wrap and season the chicken with paprika, garlic powder, oregano, and salt. Arrange the bacon strips evenly over the entire surface.
- Cover again with plastic wrap. Using a second cutting board, carefully flip the chicken so the bacon is now underneath. Remove the plastic and season the chicken side again.
- Arrange the spinach, halved cherry tomatoes, ham, and mozzarella down the center. Feel free to customize the filling with your favorite ingredients.
- Carefully roll the chicken around the filling, keeping everything tucked securely in the center. If needed, secure the roll with wooden skewers or toothpicks.
- Preheat your 12-inch Victoria Cast Iron Skillet on the stovetop. Place the chicken roll seam-side down and sear until beautifully golden brown.
- Transfer the skillet directly to a 350°F oven and bake for about 30 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F.
- Let it rest briefly before slicing, then serve and enjoy those layers of juicy chicken, smoky bacon, vegetables, and melted cheese.
