Grilled Burger Bites with Cream Cheese

Instructions:
- Season the ground beef with paprika, garlic powder, onion powder, salt, and black pepper. Cover and refrigerate for at least 2 hours, or overnight for even more flavor.
- Shape the beef into 18 small meatballs (about 1.5 oz each).
- Preheat your Victoria Cast Iron Griddle or Skillet over medium-high heat and lightly oil the surface.
- Place the meatballs on the hot griddle and cook until nicely browned. Gently press each one to create a smash burger bite, then flip and cook until done.
- In a small bowl, combine the cream cheese, chopped sun-dried tomatoes, apple cider vinegar, and a pinch of salt.
- Top each burger bite with a few mixed greens, a spoonful of the cream cheese spread, and a sprinkle of fresh cilantro. Secure with a cocktail skewer and serve immediately.
