Ricotta Mac & Cheese with Garlic Herb Breadcrumbs

Instructions:
1. Prepare the Oven & Skillet
- Preheat oven to 350°F (175°C)
- Generously butter a 9”x13” baking dish or a 12” Signature Series skillet
- Set aside
2. Cook the Pasta
- Bring a large pot of water to a boil
- Add a generous pinch of salt
- Cook pasta according to package instructions
- Drain and set aside
3. Make the Cheese Sauce
- In a pot over medium heat, melt 4 tbsp butter
- Whisk in flour and cook for about 60 seconds
- Slowly whisk in whole milk and heavy cream
- Season with salt, black pepper, Dijon mustard (optional) and hot sauce (optional)
- Continue whisking until the mixture begins to simmer
- Reduce heat to low
4. Add the Cheese
- Gradually stir in shredded cheddar and ricotta
- Mix until fully melted and smooth
5. Combine Pasta & Sauce
- Add cooked pasta to the cheese sauce
- Mix until fully coated
- Transfer to the prepared skillet or baking dish
6. Prepare Garlic Herb Breadcrumbs
- In a skillet over medium heat, melt 4 tbsp butter
- Add minced garlic and cook for 60 seconds
- Remove from heat
- Stir in fresh herbs and breadcrumbs
- Mix until evenly combined
7. Assemble & Bake
- Evenly spread breadcrumbs over the mac & cheese
- Bake for 30 minutes, or until the cheese is bubbling and the top is golden brown
