Dutch Oven Peach Cobbler

Preheat the oven.
Preheat oven to 375°F (190°C). Lightly grease a Dutch oven with oil. -
Prepare the peach filling.
In a large bowl, combine the sliced peaches, 1/4 cup sugar, cornstarch, cinnamon, ginger, honey, and vanilla extract. Toss until the peaches are evenly coated, then transfer the mixture to the Dutch oven. -
Make the biscuit dough.
In a medium bowl, whisk together the flour, 2 tablespoons sugar, baking powder, and salt. Add the cold butter and work it into the flour using your fingertips or a pastry cutter until the mixture resembles coarse crumbs. -
Add the milk.
Stir in the milk just until the dough comes together. Avoid overmixing to keep the biscuits tender. -
Assemble the cobbler.
Drop large spoonfuls of biscuit dough evenly over the peach filling. -
Bake.
Bake for 40–45 minutes, or until the biscuits are golden brown and the peach filling is bubbling around the edges. -
Cool and serve.
Let the cobbler cool for about 5 minutes. Scoop into bowls and serve warm with vanilla bean ice cream.
