Ingredients

For the Rice

  • 2 cups uncooked jasmine rice washed
  • 2 cups water (will vary if you don't use jasmine rice)
  • 2 tablespoons low sodium soy sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon dry Guyanese thyme (optional-can swap)
  • 1 large chicken breast chopped into small cubes
  • 1 tablespoon low sodium soy sauce
  • 1 tablespoon sweet soy sauce (or oyster sauce, hoisin sauce, etc)
  • 4 cloves garlic grated
  • 1 tablespoon ginger grated
  • 2 wiri wiri peppers chopped
  • vegetable oil to cook everything
  • 2 eggs (seasoned with salt and pepper)
  • 2 teaspoons chilli flakes (use more or less)
  • 10 basil leaves (fresh) or 2 tsp. dried basil

For the Chicken

  • seasoned chicken (see above)
  • 1 tablespoon sweet soy sauce
  • 1 small onion chopped (red or white)
  • 1/2 red bell pepper chopped
  • 1/2 green bell pepper chopped
  • 1/3 cup corn kernels
  • 1/3 cup green peas

For the Fried Rice

  • cooked rice (see above)
  • 2 tablespoons hoisin sauce (or any thick brown sauces)
  • 1 tbsp. low sodium soy sauce
  • 2 teaspoons sesame oil
  • 1 teaspoon dried Guyanese thyme
  • 2 carrots, grated
  • 1 cup sliced cabbage (some to cook and some to garnish)
  • 2 scallions, sliced, to finish
  • salt/pepper/chilli flakes to taste if desired
